Cultivated Washed Coffee to 1800 – 2200 meters of altitude with collection from November to February, and a second
small collection from June to September.
Ethiopia is a huge country (as big as Spain and France combined), with a high geographical diversity.
It presents great contrasts that go from the most inhospitable place on earth, the Danakil depression, to the jungles
South West in Jirga Chefe. But if there is a geographical characteristic that defines Ethiopia, it is its height: from the
plateaus from the center of the country to the mountains of the South, the average height above sea level is 1330 meters.
The Sidamo area is located in southern Ethiopia, on the border with Kenya and Somalia.
Sidamo is the name of this territory, rather mountainous, but also of the population that inhabits it and its
language.
Here the coffee grows spontaneously on the slopes of the heights or is cultivated in coffee gardens (small plots of land
in which each family also plants fruit trees and vegetables) or in larger plots, and is treated in the
washing stations scattered on the territory.
In addition to being an important item in the local economy, it is also the protagonist of the social and cultural life of the place.
In Sidamo, an invitation to participate in the coffee ceremony — ancient ritual whose steps are transmitted from
generation to generation — It is a sign of friendship and great respect... and the key to an unparalleled experience.
Sidamo coffees are coffees from the highlands in the south of the country, in the Rift Valley, with abundant rainfall and
fertile soils. These coffees must present a clean cup, with clear fruity notes and bright acidity and a
characteristic sweetness.
For a medium roast, we get Dark Chocolate flavors, but also sweet to vanilla, somewhat floral, with hints
citrus to tangerine
