Kenyan coffees are sometimes known as the "Champagnes" of coffees.
This name refers to its very defined and special flavor, whose main characteristics are its complex and
peculiar acidity, due to the presence in its composition of phosphoric acid in greater proportions than in other
coffees, which on the palate may slightly remind us of carbonated drinks.
Kenya is one of the most recognized producers of the so-called "Specialty Coffees". Thus, saying Kenya in coffee is
say quality. It is interesting to note that in this country only 30% of the production is obtained by
industrialized and moves through the large commercial circuits, the rest does so through alternative routes and to markets
high quality specialized
In Kenya they have their own classification for coffees, according to the size of the bean (AA, A, AB,...). The grains that are
under the AA rating, such as ours, they represent around 10% of the country's production.
The Kirinyaga region is recognized for producing one of the best coffees in Kenya, it is located at the foot of the
Mount Kenya, the highest in the country. In this region, 72% of coffee production is managed by small
producers who are organized in cooperatives where the plots are measured by the number of coffee trees and not by
the normal units of measure (hectares), they share the washing stations to process their cherries.
In the washing station the cherries are pulped, fermented overnight and then the beans are washed and
placed to dry on raised beds or commonly called African beds.
The water used for the washing process comes from the Rundu River. The region has ideal growing conditions,
a red volcanic soil, with elevations ranging from 1700 masl to 1800 masl and an annual rainfall
of 1000-1200 mm divided into rainy periods.
For a medium roast, we obtain Dark Chocolate flavors, but also sweet to caramel and vanilla, something floral to
Jasmine, but its most characteristic touch is citrus, mainly lemon.
Complex, juicy and with outstanding acidity.
